Simple pancakes

So Here’s the deal, I love pancakes. There’s something really nostalgic about them. My aunt use to make them for my sister’s and I on weekend when we stayed at my grandmothers house. I love those women, they took such great care of us.



Today I enjoy making them for my husband and I on the weekends. this recipe is fairly simple and you probably have most of the ingredients already. What I was looking for was not to duplicate the recipe of my aunts pancakes cause if you knew her you would know that she is EVERYTHING and that’s not an easy task. Instead I wanted to create a recipe that gave me that same feeling of love when I ate them and I think these have met that goal.

Recipe

Ingredients - I usually weigh my ingredients but I kept this one is weird ass American cups for ease.

DRY

3/4 cup All purpose flour - can sub with bobs red mill 1 to 1 for GF

1/4 cup corn flour- I use bobs red mill

2 tsp baking powder

1 tbsp sugar - coconut sugar works great here

a pinch of salt

WET

1 tbsp of apple cider vinegar

1 cup of plant based milk - I recommend almond or cashew

2 tbsps of light oil- like sunflower

Optional add ins: 2 tsp of chia seed, 1/8 tsp of vanilla bean powder, 1 tsp rose water, sub oil with small ripe banana mashed for banana, sub the corn flour with cocoa powder to make chocolate. The possibilities are endless.

Instructions

Put all dry ingredients into a med size mixing bowl and whisk them together. In your wet ingredients measuring cup add the apple cider vinegar, then measure your milk using the same cup, it will cuddle slightly this is normal and what you want. Add the milk and vinegar mixture to the dry ingredients then add the oil. Whisk these all together, there may still be a few lumps but that’s okay!

Preheat your pan or skillet on med low heat and grease lightly with an oiled paper towel when ready. Most of you already know how to cook pancakes so wait all the right signs before flipping. If you need more tips DM me on Instagram.
